Red Curry Paste

Red curry paste is one of the most basic in Thai cooking. You can make much more than is needed since, like most curry pastes, it will keep for quite some time in the refrigerator.

Ingredients

Dried chilies10
Lemongrass2 TblChopped
Shallots2 TblChopped
Garlic4 TblChopped
Galangal3 Slices
Kaffir Lime Peel1 tspGrated
Salt1 Tbl
Black Pepper1 Tbl
Shrimp paste1 tsp
Coriander roots1 TblChopped

Preparation Method

  • Simply grind all the ingredients together until they form a smooth paste.
