Curry Pastes

Thai curry pastes consist of a thick mixture of ground herbs and spices such as galangal, lemongrass, coriander, garlic, shallots and chilies. Thais will usually purchase prepared curry pastes from the market or supermarket, but recipes for making them from scratch also abound. In fact, many famous supermarket brands of curry paste started out as home-made versions by chefs.

Don't let the relative simplicity of the ingredients fool you, with the full compliment of fresh ingredients, this curry can be surprisingly complex. That said, finding fresh kaffir lime leaves and sprigs of green peppercorns is probably the biggest challenge you'll face in making this dish, and it really won't taste the same without them.
